We create flavors using fresh, local ingredients, olive oil (the ‘gold’ of the Cretan earth), aromatic herbs, and also traditional techniques that are taught from grandmother to her daughter and so on.
The Cretan cooking is simple and without many spices such as their lives in the old times. You use your knowledge to put the right amount of the ingredients.
